Laura Santtini is what's known as a Cognitive Cook who creates foods designed to challenge perceptions of flavour and introduce your taste buds to new experiences. She is the daughter of the people that launched the well-known Santini Belgravia restaurant in London, and uses her heritage as an inspiration for her food.
Laura creates great innovative recipes using her range of pastes and condiments, many of which rely on the fifth flavour (outside of sweet, sour, salty, bitter) called umami, discovered by the Japanese in 1908, a flavour that can revolutionise a range of dishes.
