is the second fill of the casks, so
the whiskey flavour is quite subtle
and the oak more prominant,
mellowing the complex malts. This
is one that shouldn’t be rushed.
This Northern Irish Brewery takes inspiration from the Mourne Mountains’ natural beauty and heritage. According to history, the mountains were a major source of prehistoric gold. Skilled craftsmen would work these raw minerals into dazzling creations, which is exactly what the brewery seek to do with their beers.
